Makes 4 mugs
4 cups (1 quart) milk
1/3 cup sugar
2/3 cup chocolate chips
2 tablespoons cocoa powder
1. In a heavy-bottomed medium-sized pot, whisk together the milk and sugar over medium heat, and stir intermittently for 2–3 minutes, to scald the mixture and dissolve the sugar, bringing the mixture just to the brink of boiling.
2. In a medium- sized heatproof bowl, measure the chocolate chips and cocoa together. Pour the hot milk mixture over the bowl of chocolate, and let it sit for 60 seconds so the heat penetrates all the ingredients; then slowly whisk it to hydrate the cocoa powder and melt the chocolate into a ganache. Continue whisking gently until the entire mixture comes together as smooth, flavorful hot chocolate.
3. Divide evenly among four mugs, and drink it immediately. If prepping for a snow day ahead, store this mixture in an airtight container in the fridge for 1 week.
